ARROZ CARABINEIRO
Since moving to Portugal, one of my favourite things to eat has been this specific type of rice.
This dish is like a soup and rice hybrid, which tickles a childhood memory in my brain because my mum used to make us tomato soup with rice. She also used to make pasta with milk and sugar...Polish food can be weird sometimes.
What we're making here is Arroz Carabineiro. The carabineiro is a big prawn found in warmer Portuguese coastal waters. The prawn's sweet taste and soft texture make it a premium ingredient, and why it cost me a mortgage.
I made a similar recipe a few months ago, Arroz de Marrisco, and upset some Spaniards by comparing it to Paella. I have now learnt something new which is that in Spain they actually do have something similar to this recipe; Arroz Caldoso. Regardless, this dish was worth the money spent on prawns that had me feeling a little insecure, but if you can't get your hands on them, replace them with regular-sized prawns and you'll still have yourself a beautiful seafood dish.
